Pavés de Laon: The city’s delicacy

Now that you’re heading up the Rue de la République back into the city center, let me introduce you to a local delicacy. Let’s admit it; one of the most exciting parts of visiting a city is diving into local specialties and uncovering the treasures scattered across its foodie scene. Now, I could have told you about the ficelle picarde, a rolled crêpe stuffed with ham and mushrooms, and topped with cream cheese; or the flamiche aux poireaux, a deliciously flaky pie topped with leeks; or even rabote Picarde, an apple wrapped in puff pastry and baked till golden… But instead, I’d rather introduce you to the pavés de Laon, which translates to the cobblestones of Laon. These were created in 2003 as a tribute to the city and its cobblestone-laden streets. If you like chocolate, don’t miss out on these little marvels! They’re soft praline chocolates covered in meringue and shaped like small cobblestones. After walking on them all day, it’s only fair you get to taste them!
