The charming Pie Square, home to the town’s covered market, was laid out in the 16th century. It sits on the former site of a house belonging to a man who was beheaded for heresy. After his execution, it was demolished to make way for the square we see today. Fast forward to the 19th century, and the covered market was built, to plans by Avignon architect Léon Feuchère. For over a century, some forty traders have been selling their fresh produce here. In 1974, a new building was constructed just to accommodate them. Even before you enter, you’ll be struck by its unique, vibrant green living wall. Designed by botanist Patrick Blanc in 2005, it covers the entire north façade, with numerous plants stretching over more than 30 meters. Talk about eye-catching! But the real magic lies within the market itself. Here, you can sample all Provençal flavors and specialties. Highlights include the “daube avignonnaise”, a local twist on daube provençale, the French slow-cooked stew; they use lamb or mutton shoulder instead of beef, and white wine instead of red. Don’t miss the “crespeou,” a savory omelet cake, flavored with herbs and vegetables that vary according to the recipe. It’s usually served with a tomato coulis. For a taste of the region’s unique flavors, try the “berlinguettes,” hard-boiled eggs stuffed with anchovies or vegetables, depending on the area, or the “croustade avignonnaise”, a savory pie made with puff pastry, minced lamb, and sausage meat. Let’s not forget “navarin”, a lamb and vegetable stew. The “papeton d’aubergines” is yet another must-try; it’s a savory flan made with eggplant and egg caviar, and served with a tomato coulis. For dessert, treat yourself to the famous Carpentras strawberries, the “mendiants of Provence”, the sweet fougasse or the quince paste.
